Col is a reference to Col Fondo, the Italian term used to describe the ancestral method of sparkling wine production.
A soft and inviting nose of waxy yellow apple, unripe apricot and quince. A textural, chalky palate with delicate notes of grapefruit and raspberry before a subtle savoury herbal finish.
A mix of components, some direct press, some saignée, all fermented separately in stainless steel ahead of blending. The wine is bottled with a small sugar addition and left to re-ferment in bottle. This wine is not disgorged so has a pleasant natural haziness.
