Distinctly English, yet hard to place at the same time. Pomegranate, raspberry and cherry fruits intermingle with notes of clove and allspice.
Our early ripening Pinot Noir Précoce was crushed and destemmed, before being left to macerate on the skins for two weeks with gentle punchdowns by hand. It was then pressed to two old burgundy barrels where it aged for 20 months. The barrels were racked and blended together, before bottling without fining or filtration.
