The wine has a wonderful copper and rose gold hue, changing in the light. Crunchy peach flavours with ice tea like tannins. A delicately fragrant finish makes for a very elegant wine.
Pinot Gris was macerated on its skins for eleven days, with gentle punchdowns by hand twice a day. The vessel was filled in a mille-feuille of 70% de-stemmed and 30% whole-bunch fruit. After its time on skins, it was pressed off to stainless steel. Bottled without fining or filtration.
